Quick & Easy Back to School Lunch Ideas

With schools opening up and our busy lives resuming, here are 3 quick and easy school lunch ideas your kids will love!

You’re A Star Sarnies

You Will Need

  • Bread
  • A Filling of your Choice
  • Cookie Cutter (A Shape of your Choice)

Method

Take your sandwiches to the next level! Instead of preparing a simple sandwich for your child, why not try something new.

Start by preparing a sandwich of your choice. It can be on your choice of bread, with your child’s favourite filling.

Next, you want to get your cookie cutter. Place your cookie cutter in the top left corner of your piece of bread (depending on size). Press down firmly to cut out your shape. Repeat this process until you have used up as much of your sandwich as possible. If you can only manage to fit the cutter on the sandwich once, go for the middle, this way you get as much of the filling as possible.

Don’t forget – Don’t throw away those left over pieces of bread. Pop them in the freezer to use for breadcrumbs in the future!

Homemade Pizza Bagel Bites

You Will Need

  • Bagels
  • Marinara Sauce
  • Grated Cheese
  • Pizza Toppings (Such as; Mini Pepperoni, Sweetcorn, Chicken, Mushrooms, Bacon)

Method

Start by preparing your toppings. If you are using toppings that require cooking prior to creating your pizza bagels, this is the time to do so. You can also use this time to preheat your oven to 200°C.

Once your toppings are prepared, the first step would be to toast your bagel. Cut your bagel in half and toast in a toaster for 2-3 minutes. Once golden brown, you can take your bagel out of the toaster and place it on a baking tray.

Start by covering your bagel in marinara sauce. Spread your sauce evenly across the bagel using a knife or the back of a spoon. Once covered, you can sprinkle over your cheese.

The next part is our favourite. Finish off your bagels with toppings of your choice. Our personal favourite is pepperoni, but you can create whatever takes your fancy.

Once ready, pop your pizza bagels onto the top shelf of your oven or grill for 10 – 15 minutes, or until your cheese is melted and starting to brown.

Healthy Strawberry Muffins

You Will Need

  • Whole Wheat Flour (1 1/5 cups)
  • Rolled Oats (1/5 cup)
  • Baking Powder & Baking Soda (1 tsp)
  • Honey (1/3 cup)
  • Oil (1/3 cup)
  • 1 Egg
  • Vanilla Extract (1 teaspoon)
  • Milk (1 cup)
  • Strawberries (1 cup)

Method

Preheat the oven to 200°C. and grease a standard muffin tin with nonstick spray.

Start by adding together all of your dry ingredients in a mixing bowl (flour, oats, baking powder, and baking soda). Stir together well to combine the mixture.

The next step is to add in your wet ingredients. Start by adding your milk, honey, oil, egg, and vanilla extract and stir well until the mixture has combined together. Take your strawberries, cut them into small chunks, and combine them with your pre-mixed mixture.

Evenly divide the batter between the muffin tin using about 1/4 cup per muffin.

Bake your muffins for 16-18 minutes or until a cake tester inserted into the center comes out cleanly.

Remove from oven, let cool for a minute or two, and remove to cool fully on a wire rack.
